BAKED EGGPLANT
This is my go to recipe to enjoy eating eggplant. My husband is not a big fan of eggplant but every time he comes home and smells it, he just start eating non stop.
Ingredients:
• 1 large eggplant sliced into 1 inch slices
• 1 lb ground beef
• 6 ripe tomatoes puréed
• 2 tbs tomato paste
• 1 onion chopped
• Shredded mozzarella or parmesan cheese
• 3 c water
• 2 tbs Worcester sauce
• 2 tbs chicken bouillon powder
• 1 tbs vegeta
• 1 tbs black pepper
• 1 tsp allspice
• 1/2 tsp cardamom powder
• 1/2 tsp cinnamon powder
Brush both sides of the eggplant slices with oil and salt. Broil on both sides till a little browned. In a pot sauté the onion for five minutes then add in the beef. Break it up and keep stirring for ten minutes. Add in the spices and sauté the five minutes more. Add in the tomato purée, paste and water and let simmer for 15-20 mins on low heat.
In a 9×13 Pyrex put a thin layer of the meat sauce. Put next a layer of eggplant, top with half of the meat sauce, and a layer of shredded mozzarella or parmesan cheese. Repeat with the second layer. Bake in a 400 oven uncovered until golden.

Why I love this recipe?
Eggplant is one of my favorite vegetables. It is very easy to deal with. You can enjoy it fried, baked and also grilled. You can consider it as a substitute of meat. When I was young, I wasn’t a big fan of eggplant. But when got older, I found out that I missed a lot of yummy bites of eggplant.
